Fall is in the Air

Till the season for Fall preparations! As we enter this beautiful season, an abundance of new recipes are made available to us. Some ingredients are now being used that aren't normally part of our diet, like the very popular: PUMPKIN! Fall lovers all around cant wait for their pumpkin flavored everything! From coffees, cookies, soups and dinners, pumpkin is a versatile ingredient that not only taste good, but is good for us. Some benefits of pumpkin include:

  • Feeling more full due to the high fiber count

  • Lowers blood pressure

  • Heart healthy

  • Keeps eyesight sharp

  • Aids weight loss

  • Boost immune system

We have entered the season of giving, and a great way to give is sharing with others. Our favorite recipe to share are these delicious Flourless Low Carb Pumpkin Cookies. These cookies are a great treat for your family or as a party offering. An easy recipe that will only take you about 20 minutes to make. You wont be disappointed with these delicious AND nutritious cookies. Cut back on the heavy creams and sugars with this recipe!

SERVES: 9

Ingredients:

  • 1/2 cup softened coconut butter

  • 1/2 cup sunbather

  • 1/2 cup pumpkin puree

  • 1 egg

  • 1/2 cup Pyure stevia

  • 2 1/2 teaspoons pumpkin pie spice

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon vanilla liquid stevia

  • optional toppings: melted sugar free chocolate / raw pumpkin seeds

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F.

  2. Line a baking sheet with silat or parchment paper.

  3. Place all ingredients into a food processor and process until incorporated.

  4. Measure out a heaping tablespoon of batter and place onto baking sheet about an inch apart. Makes between 18-20 cookies.

  5. Bake 13-15 minutes or until cracks form in cookie.

  6. Let cool slightly and add melted chocolate drizzle and pumpkin seeds onto chocolate if desired.
